1/2 cup olive oil
1/4 red wine vinegar
1/2 tsp. salt, 1/2 tsp pepper
3 Tbsp chopped fresh mint
Whisk the above ingredients. Toss with:
8 cups diced seedless watermelon
1 chopped sweet onion
1 chopped seeded English cucumber
Crumble 4 0z. feta cheese on top.
Serves 8 (recipe can be easily divided in half)
